FOR THE SALMON

1 tbsp freshly ground black pepper

2 tbsp salt

½ cup plus 1 tbsp (200 g) honey

6 star anise

2 tbsp soy sauce

2 tbsp white wine vinegar

14 to 18 oz (400 to 500 g) smoked salmon fillet with skin

FOR THE BLINIS

1 (¼-oz / 7-g) envelope active dry yeast

1 tsp sugar

1 small cooked beet, peeled

1 cup (125 g) all-purpose flour

½ cup (125 ml) milk

pinch of salt

2 eggs

2 tbsp (25 g) butter, melted, plus 1 tsp for the pan

AND FURTHER

½ cup (100 g) mascarpone

3 tbsp pomegranate seeds
